Chicken Souvlaki with Tzatziki

Ingredients

  • Souvlaki Marinate
  • 1-2 Lbs Pork Shoulder, trimmed, cut in 1″ cubes

  • 1/4 Cup Olive Oil

  • 1/4 Cup White Wine

  • 1 Tablespoon Lemon Juice

  • 1.5 Tsp Dried Oregano

  • 1.5 Tsp Dried Mint Leaves

  • 3 Cloves Garlic, Minced

  • 1 Bay Lead Crumbled

  • 1 Tsp Salt

  • 1/2 Tsp White Pepper

  • Pinch of Red Pepper Flakes

  • Tzatziki Sauce
  • ~1/4 English Cucumber, peeled & seeded

  • 1 Cup Greek Yogurt

  • 2 Cloves Garlic, pressed

  • 2 Tsp Dill Weed

  • 2 Tsp Lemon Juice

  • 1/4 Tsp Black Pepper

  • 1/4 Tsp Salt or to taste

  • Additional Ingredients for Serving
  • 1 Large, halved, and sliced Tomato

  • 4-6 Pieces of Naan or Pita

  • Chopped Romaine Lettuce

  • 1 Large Red Onion, Sliced

Directions

  • Souvlaki Marinate
  • Prepare your Pork Shoulder by trimming any excess fat and then cubing it into 1″ cubes. Set aside.
  • Place your cubed pork into a gallon Ziploc bag.
  • In a mixing bowl, combine all of your dry and wet ingredients for the marinate. Mix until well combined.
  • Pour your marinate into the Ziploc with the cubed pork, seal shut, and massage the pork around to combine well with the marinate.
  • Put the pork in the fridge for 2-4 hours, at least.
  • Tzatziki Sauce
  • Peel and seed about 1/4 of an English Cucumber, loosely chop.
  • Portion out your Yogurt into a small mixing bowl
  • Add Cucumber to a blender.
  • To the blender, add garlic, dill, lemon juice, pepper, and salt
  • Add the blender contents to the yogurt, mix well.
  • Souvlaki Meal
  • Preheat your oven to 450F
  • Line the bottom of a cooking tray with tin foil.
  • Insert a grate (cookie grate will do) into the cooking tray. Lay the pork shoulder cubes on the grate, spaced evenly.
  • Bake @450F for about 15 minutes, check for doneness.
  • Serve in Pita or Naan, topped with Tzatziki Sauce, Tomato, Lettuce, and Onion.

Notes

  • Alternatively, you can cook the pork on skewers or in a veggie tray on your grill.
  • For a gluten free option, serve over a large chopped salad.
